Mouse’s Pink Cakes



100g Organic strawberries, crushed superfine

100g Organic white chia seeds

50g Organic coconut oil

1/4 Cup raw honey

3 Organic eggs

150g Gluten free self raising flour (We use Dovesfarm)


Preheat oven to 200°C/Fan180°C. Mix together strawberries and chia seeds and set aside for 15 minutes. In a separate bowl mix coconut oil, honey, eggs, then add strawberry/chia seed mixture. Add flour and mix well. Spoon into greased cupcake tin and bake for 20/25 minutes. Let cool for 20 minutes. 

Any cakes in our house don’t really get to cool down before it’s devoured.

Enjoy with a glass of homemade almond milk!!
