Roast Veggies


  

This week I thought I would try something new, and it worked!!! It was a unanimous vote, perfect texture, sweet, wholesome veggies 🙂

Ingredients:

1 Organic Butternut

4 Organic Sweet Potatoes

8 Organic Carrots

2 Very Ripe, Organic Oranges

50 ml Organic Cold Pressed Coconut oil

Salt to taste

1 Teaspoon Organic Cinnamon

Method

Preheat oven to 180°C/Fan160°C. Wash and roughly chop all the veggies and oranges. I don’t peel veggies, so skin and all goes into the roasting pan with a lid. Drizzle coconut oil and cinnamon over, and season with salt. Roast in the oven for 30 minutes and serve with honey & mustard chicken or boerewors 😉

Even Lucky had some. And the leftovers I blended and made flapjacks with!
